Cherry Cake

2 Cups Self-raising Flour
1 Cup Bran (like All-bran)
1 Cup Soy Milk
250g (1/2 Cup & 2 Tbsp) Soy Margarine
1 Cup Cherries
1 Cup Sultanas
1 Tbsp Vanilla Extract
1 Tbsp Cinnamon

Put all dry ingredients in mixing bowl, add fruit, vanilla and milk. Melt margarine slightly so just a little soft, put in smaller mixing bowl and beat for a little while. Add margarine to rest of mixture and beat thoroughly. Place in greased tin and put on low heat for aprox 25-30minutes. Will harden as it cools.
