Chowder Soup


1-1/4 cups water
1 cup thinly sliced carrots
1/4 cup of soy milk  or milk of choice (nut, oat, hemp, etc.) 
1 cup cooked potatoes or (frozen southern style hash brown
1 can (8-3/4 ounce) cream corn (or corn taken off the cob) 
1 chopped green or red pepper


Combine water, carrots, pepper, and potatoes in large saucepan. Simmer 15 minutes or until vegetables are tender.
Add remaining ingredients; heat thoroughly, stir occasionally.
Serves: 2
Preparation time: 30 minutes
