Ingredients
3 med. potatoes
1 small pumpkin
2 large carrots
1 parsnip
1 red pepper
2 onions
1 cup broccoli
celery root diced
1 cup spinach chopped
Dice all veggies into 1/2 inch cubes
In a bowl and combine:
1 tbsp lemon juice
1 tsp salt (more or less)
1 tsp pepper
1/4 tsp cayenne pepper
1 tbsp oregano
1 tbsp basil
1 clove garlic- minced
1 med onion, minced or 1 tsp onion powder
1/4 cup olive oil
1 tsp thyme or rosemary or both
Method
Preheat oven 350 degrees
Grease baking pan (needs to have depth so juices gather)
Combine veggies into baking dish then pour liquid spice mix over veggies and mix well
Cook covered for 30 min, stirring once. Increase oven temp to 425 degrees and uncover pan.
Bake for 30 min, stirring occasionally, or until soft. Tip: Add any veggies seasonal veggies you like.
