Ingredients
2 1/2 cups almond flour
1/2 tsp sea salt
1/2 tsp baking soda
2 flax eggs
1/2 cup agave, or (coconut nectar or honey)
1 cup milk of choice, nut, oat, or hemp
3/4 cup coconut oil
1 cup Cherries
1 cup Sultanas
1 Tbsp Vanilla Extract
1 Tbsp Cinnamon
Method
Make flax eggs, 1 tablespoon flax meal plus 3 tablespoons water= 1 egg
In a large bowl, combine almond flour, salt, cinnamon and baking soda
In another bowl, combine nut milk agave, flax eggs, coconut oil and vanilla
Stir wet ingredients into dry
Gently mix in cherries and sutanas
Pour batter into a baking dish
Bake at 325° for 30-40 minutes, until golden brown and a toothpick inserted into the center of the cake comes out clean
Cool and serve
