1 pack of tofu
2 cups fine cornmeal
2 Tbsp oil of choice (rice oil handles well high heat)
5 green tomatoes
salt and pepper
Slice and completely dry firm tofu with clean towel.
Coat tofu in fine cornmeal (nutritional yeast can be added)
Fry in hot oil on a cast iron skillet until golden brown, remove and place on a paper towel.
Cut tomatoes into thick slices, coat with fine cornmeal and fry in the hot oil until golden brown, remove and plate. Add salt and pepper to taste.
