Zuccini Noodles


2/3 cup chunky peanut butter
4 Tbsp. coconut aminos or (soy sauce/tamari/Bragg’s)
2 cloves garlic, minced
1 green onion, chopped
1 tsp cayenne pepper
2 Tbsp. sesame oil
3 zucchini
2 cups chopped broccoli florets
1 chopped red bell pepper
2 Tbsp. sesame seeds
1 tsp. coconut nectar (or yacon syrup, or maple syrup)optional


Use a spiralizer to create your zucchini noodles.
Finely chop all the vegetables.
Mix peanut butter, soy sauce, garlic, and green onion. Add the sesame oil and cayenne pepper mix in well, whisking until smooth.
Place the raw zucchini pasta in a large bowl, add chopped vegetables and add the peanut sauce, toss to coat. Top off with sesame seeds. Serve
