Vegan Eggnog
No Egg, Eggnog is a healthy vegan option, it’s creamy and delicious. If you add some coconut yoghurt, you are getting your probiotics as well. This recipe can be used for a party treat or for your morning smoothie , just add some powdered, or leafy greens.
Cashews are high in soluble dietary fiber, and vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B-6), riboflavin, and thiamin (vitamin B-1). These vitamins are essential for metabolism of protein, fat, and carbohydrates at the cellular level.They are rich in minerals, monounsaturated fatty acids, and health-promoting phyto-chemicals that help protect us from diseases and cancers. Cashews are a great source of minerals like manganese, potassium, copper, iron, magnesium, zinc, and selenium. Selenium assists in developing antioxidant enzymes such as Glutathione, one of the most powerful antioxidants in the body.
Ingredients
serves 3, time 5 minutes
4 cup milk of choice you can combine I used oat, coconut and coconut milk yoghurt
1 1/2 cup soaked cashews
1/2 cup maple syrup (honey, 5 dates, agave, or sweetener of choice)
2 tsp pure vanilla extract
4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/2 tsp cloves
a little rum, or Baileys, Kahlau or hazelnut liquior (optional)
Method

Combine all ingredients and blend until smooth. Drink cold, or heat if desired.
